The kids were asking for something sweet after dinner so I made these really quickly. They are gluten, egg and dairy free and really healthy!
2 cups shredded coconut
1 cup of brown rice flour
3/4 cup of almond milk
1/2 cup coconut sugar
The juice of 1 orange plus the zest
Mix this all up and just plonk the delicious bundles of health on a baking tray.
I baked mine for 25 mins at 200 in the middle of the oven..
