Summer Salad


Salad can be dull or’s all about the effort you put in. For me it’s about colour and so when I make a salad I add in the most colourful things I can find in my fridge.

You don’t have to have the same ingredients as I have here. This is just the inspiration for you to create…

Here’s the one I made for lunch yesterday. It was satisfying as well as colourful and contained lots of nutrients.


This one has:

1 Grated peeled raw beetroot

2 large handfuls of kale massaged with olive oil and salt

1 cup of pomegranate seeds

1 large handful of fresh coriander

10 mini gherkins

4-5 mint leaves and purple basil leaves

A handful of toasted pumpkin seeds

I made a vinaigrette with 1/4 cup blackberries (you can use raspberries fresh or frozen) juice, 1/4 cup apple cider vinegar, 1/2 cup olive oil, Himalayan salt and cracked black pepper.
