The whole family wanted ice cream today and as we are dairy free and had some really ripe avocados to use up I put this together. It really didn’t take long.

This recipe makes 4 small scoops like the ones in the picture.

1.5 Ripe Avocados

1/2 Banana

1/2 cup Desiccated Coconut

1/8 cup Water or Coconut Water

1/4 cup Maple Syrup

1 Tbsp. Lemon or Lime Juice

1/2 a Vanilla Pod

1/8 Tsp. Salt

Blend/ food process until smooth. Add water by the teaspoon if you need more than 1/8 cup to get it to blend.

Cacao nibs and Coconut Nectar or Maple Syrup as toppings.


Either follow the manufacturer’s instructions on your ice-cream maker or just freeze the mixture allowing it to stand for 10 minutes on the kitchen bench before serving -if not using a machine.
