Caramelised Pear with Candied Pecans and Cashew Vanilla Cream

I’ve been craving pears so I thought I’d have a go at caramelising one and making  a superb vegan dessert. 

I put 1/2 cup of raw cashews in water to soak whilst I made the other things. 

I roasted 100g of raw pecans for 5 minutes at 160C then added 4 tsp maple syrup and put them back into the oven for 5 more minutes. 

I washed the pears and grilled them whole turning them frequently to get the outsides black and the insides soft. This took around 1/2 an hour. 

When the pears looked done I blended the rinsed cashews with 2 tsp vanilla paste, a tsp or two of water to get the blender going and a good pinch of Himalayan salt. 

Once plated, I sprinkled cacao nibs and star anise powder over the whole thing.. 😍😍😍😍
