When it’s cold I start wanting to eat spicy warming food and this smells amazing as its cooking!
I doubled the recipe so that I can freeze some.
- First, wash 1 1/4 cups of yellow split lentils until the water runs clear.
- Put them in a large pan with the following ingredients:
- 35g grated fresh ginger
- 1tsp curry powder
- 1tsp turmeric
- 1 cinnamon stick
- 1 cup dessicated coconut blended with 2 cups water
- 1 medium onion
- 1/2 to 1 green chilli
- 2 cloves of grated garlic
- 400ml water
Once the lentils are cooked, heat 2tbsp coconut oil in another pan. Add 1 chopped clove of garlic, a little more green chilli if you like heat and half a chopped onion with 2tsp of yellow mustard seeds.
When the onion and garlic look browned pour the mixture into the lentils and stir.
Add fresh coriander and lemon wedges.
