Vegan Chilli

Yum! This is such a delicious recipe. No need for meat as its got bags of flavour. 

I don’t use tinned products so I soaked 2 cups of dried kidney beans overnight and all day, then cooked them until they were just soft.

I roasted 600g of fresh tomatoes with a drizzle of olive oil in the oven for 1/2 an hour to make a sauce. 

  • Chop up 1/2 a squash into 1/2 in cubes
  • Roughly chop a red onion
  • Chop up 1 yellow pepper

Sweat this down until the onion is translucent in some olive oil. 

Add:

  • 2 cloves of garlic crushed
  • 1 tsp cumin
  • 1 cinnamon stick
  •  2 tsp of chilli powder (1 if you don’t like heat)
  • Salt
  • I added 1 1/2 cups of water too you might need more or less as you go along so add a cup first and see how that goes. Keep an eye on it as it simmers.

Add the fresh roasted tomatoes and the cooked beans. Simmer covered until the squash is cooked but not mush.
