Fruit going off?

I never waste fruit no matter how much I buy. You can always scoop out soft fruit’s flesh and freeze it in small portions in a small zip lock ready for smoothies. My other favourite way of using up fruit at the end of the week is to stew it down. It makes delicious toppings for porridge or ice cream and added to smoothies. When used in baking, applesauce can be substituted for oil in most recipes, with the exception of cookies, on a 1:1 basis. 


These are the leftovers from the week. My kids like apples some weeks and others they don’t, so I had a lot left over. You can do this with plums, peaches or anything you have left.


I cored them, cut them up, adding a little water so that they didn’t stick to the bottom of the pan. I threw in a vanilla pod and added 1/2 tsp star anise powder. Cinnamon would be another option. 

Beware! The kitchen will smell amazing when this is simmering down. It brings back childhood memories. 


Here’s the beautiful result. I let it cool before I blended it in a NutriBullet. 

Store this in the fridge in a sterile jar or freeze it in small bags to use in smoothies or baking later.
