Overnight Oats Breakfast Jar

Great things take a little planning and this one is perfect for a winter morning pre-rugby match breakfast.


The night before I made cashew nut milk. You can make any nut milk you like for this. 

  • 1 heaped tbsp of nut butter
  • 3 cups of water
  • 1 tsp vanilla paste
  • 1 tbsp peanut butter

Blend

In a jar I put:

  • 3/4 cup of the nut milk
  • 1/2 cup gf rolled oats
  • 1 tsp chia seeds
  • 1 tsp pine nuts
  • 1 tbsp maple syrup or honey if you are not vegan

Mix this well, cover and refrigerate overnight.

Next, I made some fruit purée.

  • 3 apples cored and chopped 
  • Flesh of 3 feijoas
  • 3 dates
  • 1 tsp vanilla paste

Add a little water to the pan and simmer gently, checking that it doesn’t dry out until the fruit is broken down.

Blend this once it’s cooled and refrigerate overnight.

In the morning you can warm up the fruit purée, add a chopped banana and some toppings such as sesame seeds and cacao nibs.

Yum!
