Easy Healthy Japanese Style Noodles

Japanese food is delicious and exceptionally healthy. 

This dish took me 10 minutes to make. I had some black bean noodles to use up but you can use any ordinary rice noodles. The sauce is quick and easy to make and can also be used as a dipping sauce for carrot sticks, cucumber or celery. 

Serves 2:



  • 2 tbsp white miso
  • 2 tbsp tahini
  • 2 tbsp rice vinegar
  • 1 tbsp gf mirin
  • 50ml water


  • Mix the tahini and miso in a small pan
  • Put the pan on a low heat and add the water, mixing as you go
  • Add the mirin and rice vinegar
  • Simmer stirring all the time to thicken a little

Cook your noodles in a seperate pan of water and once they are ready strain them and stir in the sauce. 

I added mixed seaweed, carrot, crushed garlic, snow peas, mushrooms and black sesame seeds. 

Get creative with whatever you have in the fridge!
