I was in a hurry this morning and had to dash across town to an appointment in the winter rain. No time to make nut milk with whole nuts! There is however, always time for a healthy breakfast for my boys before school.
I threw 1 tbsp peanut butter, 1 tbsp cashew butter, 2 bananas, 1 huge handful of spinach, 1tbsp chia seeds and 4 dates into the blender and filled it up with water.
I left that to sit to activate the chia seeds whist I had a shower and got dressed. A quick blend in the Vitamix and it’s breakfast on the go!! (Serves 4).
