I had 6 small ripe bananas to use up and a kid that can barely swallow. I thought I’d mash the bananas for him to eat like I did when he was a baby..The reaction wasn’t pleasant!
Anyhow, here’s what I did with those mashed over-ripe beauties!
- 6 small v ripe bananas mashed
- 1/2 cup coconut sugar
- 3 tsp vanilla extract
- 2/3 cup melted coconut oil
Blend this up.
- 2 1/4 cups all purpose gf flour
- 4 tsp baking powder
- 1/2 tsp Himalayan salt
Whisk the dry and add it to the banana mix
Bake at 160 degrees fan assisted for around 60 minutes, checking after 45 minutes.
Transfer to a wire rack to cool.
