I have tried many times now to get my youngest son with ARFID to eat pumpkin. It’s just not happening, but it’s such a nutrient dense food and in season right now, so I’ve been determined he would have some. It’s the best source of beta carotine around. This converts to vitamin A in the body, which boosts the immune system, promotes healthy skin and is good for vision. Pumpkin is also a great source of potassium.
Here’s my sneaky way of incorporating it into his diet. The smoothie does taste like roast pumpkin by the way and he drank it all. Go figure!?
- 4 1/2 cups almond milk
- 1 ripe avocado
- 3 heaped tablespoons of roast pumpkin – cold
- 2 tbsp date paste or 3 softened dates
- 1 tbsp flax seeds
