When life gives you apples…

The two apple trees in the garden are abundant this year. I’ve been stewing them and putting them in lunches for a few weeks. Today I thought I’d give this apple cake a go. You only need one medium to large apple. 



230g almond flour

8g coconut flour

1 tsp baking soda

2 tsp cinnamon 

1/2 tsp salt

1 medium apple sliced 


6 tbsp rice syrup

4 tbsp liquid coconut oil

2 flax eggs/ or 2 eggs if not vegan

1 tsp apple cider vinegar

1 tsp vanilla syrup

1/2 cup chopped pecans

Topping is:

3 tbsp almond flour

2 tsp liquid coconut oil

1/4 tsp cinnamon


Mix the wet ingredients into the dry and fold in the apple slices last.

Crumble the topping over the cake and bake at 170 degrees for 50 minutes checking that the top isn’t burning half way through. I covered mine with some baking paper at 35 minutes.

I served mine with a splash of maple syrup…
